INTERVIEW W/ TOP SKI ATHLETE, MATTS OLSSON!

Last month, I was incredibly fortunate to meet some of my country’s top Alpine athletes at the HQ of Ski Team Sweden in Åre. Amongst them, I spent some time with Matts Olsson, a World Championship medalist and one of the top male FIS World Cup competitors from Sweden, with a specialization in Giant Slalom. He’s an ultra-experienced hand on the circuit, powering through 9 seasons, and has just had one of his best in 2016/17 with two podium finishes. It struck me that the younger members of the team really look up to those who’ve given battle alongside the international legends of the sport, and Matts wears his experience with great wisdom and humility. BEHIND THE SCENES – HOW TO WRITE YOUR BOOK !!!

Cards on the table; I wasn’t born an author, and despite these bloggish scribblings, the thought of writing a book hadn’t even occurred on a post-hypnotic, unconscious, or inebriated level! The journey to writing my book Fit In 3: The Scandi Plan [it’s out on dec 29th, it would mean the world if you pre-order a copy!] was a grueling marathon of soaring highs and gloomy lows, and certainly one of the most intense challenges of my life. I can confidently say that I’ve thrown everything at it, and left nothing on the table – the book is 100% of me! But if, like me, you’ve never seen this mysterious process from behind-the-scenes before, you might also have casually assumed that these tomes magically appear, fully-formed, on shop shelves one day, conjured by the book-fairy, never paying thought to the dozens of people’s time, attention, grind, detail, and professionalism that goes into it. But much like writing a blog [which to the reader, can look like one macaroon-punctuated holiday after the next, but requires relentless toil], a book is a gigantic effort employing dozens of world-class talents, all working to fold their very best work into this little, printed package on a shelf! This blog post lifts the lid on the whole hidden process, shows you exactly what I went through, and might give you some thoughts on how to go about your own book! MY SWEDISH SANDWICH CAKE!

This month, I’ve teamed up with Hovis to celebrate today’s launch of their innovative new Hovis® Seed Sensations® Chia Bread, which is itself a partnership with The Chia Co, the world’s largest producer of sustainably farmed Chia seed. To mark the occasion, I thought I’d create a piece of Scandinavian food art! The Swedish sandwich cake, or ‘Smörgåstårta’ as we unpronounceably call it, is one of the most traditional national dishes I can think of, which captures my heritage and at the same time honours the great British love of sandwiches! With culinary roots dating back hundreds of years, it’s a real statement piece, something to exhibit (and then eat) when guests come round – you can really let your creativity go wild! Traditionally it’s made up of an array of wonderful fresh fish (which I love) and is smothered in mayonnaise (not my preference!). My alternative recipe here uses yoghurt and just a smidgeon of Organic Mayonnaise, which may sound bland but actually tastes superb! It also incorporates layers of the Chia Loaf as building blocks for the towering sandwich cake, as I am a bread fiend and actively embrace carbohydrates as part of my balanced macro approach to wellbeing! Click MORE to see the full recipe, along with a little video! When I started Fitness On Toast, I chose the name as a reaction to the sheer number of improvised meals served ‘on toast’ in the UK; my Personal Training clients would fill their food diaries with the likes of beans on toast, cheese on toast, eggs on toast, jam on toast… I wanted to highlight some Fitness on toast instead! However I believe it’s possible to create healthy equivalents to fuel you pre & post workout, yet still preserve the essence of that great national gastronomic heritage! I’ve been working with the UK’s number one oatcake brand, Nairns to achieve precisely that, and this post is all about my healthy canapés, which are delicious, super easy to make, and are served on their exquisite  Super Seeded Organic Oatcakes.
