HAVE YOUR (PAN)CAKE AND EAT IT!
PRAWN & CRUNCHY VEG WOK DISH!
This is a super quick and healthy wok-style recipe which punches in with some serious flavour, and which allows you literally to raid your veggie box! As ever, I’m using coconut oil to cook, in this case, Pura – a blend of coconut oil and rapeseed oil which can maintain its nutritional value at a high temperature and is loaded with omega 3. For more about the benefits of this awesome ingredient, check out the post I wrote a while back, ‘Going Coco-Nuts!’ – that adds the textural lift. To transform this dish further and enhance the flavours and aromas, fresh herbs & spices make a massive difference – they are game changers for taste! CHICKPEA BURGERS !
I’ve created a lot of recipes in my time as a blogger, but few have made me smile as much as this! Since I’m a pescatarian, I made these Chickpea burgers as a healthy and utterly delicious veggie option for certain summer nights when the carnivores want to go all caveman and rustle up a bbq. These alternatives are full of natural plant-based protein and super-full on flavour such that they can convince even the most fixated meat addicts around! MY SWEDISH SANDWICH CAKE!
This month, I’ve teamed up with Hovis to celebrate today’s launch of their innovative new Hovis® Seed Sensations® Chia Bread, which is itself a partnership with The Chia Co, the world’s largest producer of sustainably farmed Chia seed. To mark the occasion, I thought I’d create a piece of Scandinavian food art! The Swedish sandwich cake, or ‘Smörgåstårta’ as we unpronounceably call it, is one of the most traditional national dishes I can think of, which captures my heritage and at the same time honours the great British love of sandwiches! With culinary roots dating back hundreds of years, it’s a real statement piece, something to exhibit (and then eat) when guests come round – you can really let your creativity go wild! Traditionally it’s made up of an array of wonderful fresh fish (which I love) and is smothered in mayonnaise (not my preference!). My alternative recipe here uses yoghurt and just a smidgeon of Organic Mayonnaise, which may sound bland but actually tastes superb! It also incorporates layers of the Chia Loaf as building blocks for the towering sandwich cake, as I am a bread fiend and actively embrace carbohydrates as part of my balanced macro approach to wellbeing! Summer vanished some time ago, and even Autumn has nearly given up the ghost (small post-Halloween gag?). QUORN BOLOGNESE !
Spaghetti Bolognese remains a firm favourite dish the world over, but it’s one that we secretly know can’t possibly be that healthy. The reality is a seriously calorific event, often loaded with salt and high in fats (and not the healthy avocado-esque kinds). As part of my ongoing collaboration with Quorn, I’ve created a version that you can consider a far healthier alternative. As I’m a pescatarian (fish, but no meat) I’ve always used products like Quorn Meat-free Mince as a high-protein, low-saturated-fat source of nutrition – something I personally consider to be a key part of any healthy diet. PRAWN AND MANGO SKEWERS !
Recipe time: this delicious dish, as ever, is supposed to be quick, easy and healthy, whilst being loaded with nutritious flavour. My personal favourite part is the mixture of the sweet, smooth mango against the crispy fresh salad, the tangy ginger, lime and warm grilled prawns. It’s got such an awesome diversity of texture, temperature and taste, the holy trinity of ‘T’s’ 😀 I’ve added a touch of chilli, as I love a bit of a kick to fire up the metabolism. ‘Accessorising’ this salad with a skewer proves once again the breadth of variation open to you with these leafy dishes; experiment with salad, as it’s not limited to a tragedy of mere cucumber and tomato… (more…)
QUINOA + NUT GRANOLA !
Like most people, I’m constantly trying to master my sweet tooth; in tireless pursuit of healthy-yet-tasty dishes, here’s a fabulous breakfast offering, loaded with nourishing nutritional value and exquisite taste to satisfy the sugar craving! Granola from supermarket shelf tends to be full of simple sugars and transfats, but my home-made version is altogether more friendly! Quinoa, about which I’ve written previously, replaces oats in this batch, and a host of cinnamon-covered nuts-&-seeds make an appearance too, garnished with delicious berries! My personal view is that there’s no substitute for actual, genuine sugars, so I’ve lightly glazed the granola with Raw Manuka Honey (courtesy of Steens, with whom I’ve collaborated to whip up a number of delicious, healthy recipes). I’ve long believed Manuka to be a fabulous natural alternative to refined sugar, and has that beautifully rich floral aroma. BAKED AVOCADO, SALMON AND EGG !
If you’ve been keeping up with my recipes over the past few months, you’ll know I’m slightly in love with avocado – be it avocado veloute, guacamole or avocado chocolate mousse to mention but a few. My recipes aim to be quick easy, delicious and nutritious. This little one is no exception. One might even say it’s barely even a recipe because it involves so little ‘production time’ – it’s rare that the ‘eating’ stage takes multiple times longer than the ‘preparation’ stage! Breakfast, I would argue, is the most important meal of the day; start it right an you underpin the everything else you’re yet to achieve… this little recipe helps you stave off Brekkie Fatigue (whereby you have the same eggs on toast every day!).
