Sometimes I crave burgers, and last week, such a day befell me. However, I am pescatarian; cue the plants! I decided to whip up a batch of vegan burgers using basically whatever I had the fridge. In my favor – these burgers are one of the easiest recipes to make. Using beans (you can use chickpeas, kidney beans, butter beans etc) is ideal because they pack a proper payload of protein, are super cost-effective to make and can be produced in bulk to be frozen for another day! Happy New Year, if I may still be permitted to say; but for those who chose to extend the festive break, today is the first working day of 2018, and thus, the most tragic day of the year. January statistically correlates with a high volume of re-joiners to the gym again, resolving to be more active and live healthier. Preach alert; the choice I made years ago was to be relatively healthy as an all-year-round lifestyle approach, (not a seasonal one), and it’s broadly been an enjoyable one at that! This little colorful Tofu Salad with Cashew Dressing is something I designed to make the most of the fridge leftovers – salad innovation is a totally freestyle discipline in that you can literally chuck in whatever you fancy; I’ve chosen a mixture of colorful everyday affordable vegetables with a mixture of crunchy textures, supplemented with the silky softness of the tofu parcels and augmented by the deep and rich flavours of turmeric and cumin as well as the thick breadth of the cashew dressing. The dish is undisputedly vegetarian, but the cashew and tofu add a decent source of plant protein, and since it’s properly summery in London right now, this is a real ‘sit outside in the evening sun‘ dinner dish which is both filling yet light enough to enable an unconstrained night’s sleep! However I believe it’s possible to create healthy equivalents to fuel you pre & post workout, yet still preserve the essence of that great national gastronomic heritage! Despite its unstoppable rise to world domination, I remain a massive fan of quinoa and have featured it multiple times on Fitness On Toast – My recent ‘Quinoa Granola‘, this ‘Festive Grilled Salmon & Quinoa‘ dish,  and this ‘Quinoa Bean Salad‘ to name just a few. It’s a powerhouse seed which provides all 9 essential amino acids (a complete protein – great for veggies), plus it’s cholesterol-free, very low in sodium, and it’s almost always organic! Chia seeds (another ‘limelight’ superfood) grow to 9x their original size upon encountering water water which helps you to feel fuller for longer and keeping you hydrated too, plus they’re antioxidant rich, are high in protein, and a densely packed source of Omega 3. Persian salads don’t rely on heavy, creamy or sugary dressings, but instead use swathes of herbs and spices to flavour a dish naturally. Recipe time: this delicious dish, as ever, is supposed to be quick, easy and healthy, whilst being loaded with nutritious flavour. My personal favourite part is the mixture of the sweet, smooth mango against the crispy fresh salad, the tangy ginger, lime and warm grilled prawns. It’s got such an awesome diversity of texture, temperature and taste, the holy trinity of ‘T’s’ 😀  I’ve added a touch of chilli, as I love a bit of a kick to fire up the metabolism. ‘Accessorising’ this salad with a skewer proves once again the breadth of variation open to you with these leafy dishes; experiment with salad, as it’s not limited to a tragedy of mere cucumber and tomato… (more…)
