Almost everyone loves Sweet Potato; it naturally sits one level higher than potato on the deliciousness continuum, precisely because of the inclusion of the word ‘sweet’. These tuberous wonders profess lower-GI properties, rendering them ‘complex carbs’, whos sugars break down over a longer period of time. These properties, in turn, are less likely to leave you a hyperactive sugar-high child for an hour, followed by transformation into crushed zombie at your sugar trough for the ensuing 4 hours. With that in mind, I thought I’d throw out the recipe for something quite delectable; these gluten free sweet potato chocolate brownies are provocatively moist, soft and gooey thanks to the inclusion of this masterful, hero ingredient, which keeps them molten and exquisite. I’ve lived in Blighty for over a decade now (and am half-English by birth), but I don’t remember this country having experienced such a proper stereotypical ‘summer’ before, with countless days of uninterrupted pleasant weather, and not a hosepipe ban in sight! To mark the occasion, here’s a deliciously light, refreshing and quintessentially ‘summery’ salad, somewhat infused with Scandinavian know-how. The texture and flavour really reminds me of Swedish summers! The crunchy, quenching fennel works beautifully when tossed into a salad and whilst this particular ‘edit’ is vegan-friendly, it works sublimely when dusted with flakes of roasted salmon too! BREAKFAST POTATO FRITTATA WITH MUSHROOM & SPINACH!

The humble spud may have originated in the Andes 7000 years ago, but it features heavily in today’s Swedish diet, and is a mainstay in many of the recipes in my recent book Fit In 3. When Love Potatoes reached out to ask me to craft a delicious, healthy breakfast recipe using potatoes, I was delighted to oblige, and dipped into my deep bench of spud dishes! The potato isn’t just an incredibly versatile ‘hero ingredient’ (think roasted, baked, mashed, steamed, crisped, wedged/chipped etc), but it packs significant health benefits. Each one is loaded with flavonoids and carotenoids (whose antioxidant activities to help reduce the risk of chronic diseases), vitamin B6 (to enable enzymatic reactions and promote cellular renewal, as well as the production of serotonin in the brain and healthy heart function) and a unique type of ‘resistant starch’ that may help regulate blood sugar and improve the digestive health. They’re satisfying (their latin name solanum tuberosum literally means comforting tubers!) so you stay fuller for longer, and actually contain more potassium than a banana (which helps to regulate blood pressure and protect against the likes of stroke) or indeed any other fruit or vegetable. They’re also affordable, and always on hand as they’re grown throughout the year – the leading vegetable crop in the world. Happy New Year, if I may still be permitted to say; but for those who chose to extend the festive break, today is the first working day of 2018, and thus, the most tragic day of the year. January statistically correlates with a high volume of re-joiners to the gym again, resolving to be more active and live healthier. Preach alert; the choice I made years ago was to be relatively healthy as an all-year-round lifestyle approach, (not a seasonal one), and it’s broadly been an enjoyable one at that! This little colorful Tofu Salad with Cashew Dressing is something I designed to make the most of the fridge leftovers – salad innovation is a totally freestyle discipline in that you can literally chuck in whatever you fancy; I’ve chosen a mixture of colorful everyday affordable vegetables with a mixture of crunchy textures, supplemented with the silky softness of the tofu parcels and augmented by the deep and rich flavours of turmeric and cumin as well as the thick breadth of the cashew dressing. The dish is undisputedly vegetarian, but the cashew and tofu add a decent source of plant protein, and since it’s properly summery in London right now, this is a real ‘sit outside in the evening sun‘ dinner dish which is both filling yet light enough to enable an unconstrained night’s sleep! I’m not entirely sure what to call this healthy & tasty little experimental dessert! Perhaps ‘Prius’ because it’s a bit of a hybrid! Part apple crumble, part compote, part breakfast… it’s simply composed of 5 core ingredients – apple, cinnamon, coconut oil, manuka honey and (low sodium, low sugar) granola. Unlike apple crumble, this isn’t overpoweringly sweet, but thanks to the baked spices, it packs a serious flavour punch, and is on just the right side of subtle!

In the mind, ‘Baking’ can seem a seriously laborious chore (up there with changing the sheets and taking out the rubbish)… but this dish only involves chopping apples and then sprinkling/drizzling the remaining ingredients around. It’s baking for dummies, and I have found that it’s very hard to get wrong! Granola – yes it’s going to be a touch ‘sugary’, but I opt for most natural option – no refined sugar, low sodium, no preservatives, sweetened exclusively with honey. When you hear “high protein”, the mind naturally plays a stereotyped little game of word-association, & you come up with things like ‘barbecue’, ‘chicken breast’, ‘juicy steak’ etc. You certainly wouldn’t think ‘vegetables’. But certain plants, grains and seeds are vast oceans of protein; quinoa & tofu, are two such oceans, making them the a fabulous dietary ingredients to complement your training regime, and to accompany a healthy lifestyle. My quick and easy 320-calorie stir-‘fry’ pictured above shouldn’t take longer than 15-20 minutes to throw together, it’s significantly lighter than a traditional stir-fry, full of nutritional goodness and I think it tastes just as yummy!
