BAKED AVOCADO, SALMON AND EGG !
If you’ve been keeping up with my recipes over the past few months, you’ll know I’m slightly in love with avocado – be it avocado veloute, guacamole or avocado chocolate mousse to mention but a few. My recipes aim to be quick easy, delicious and nutritious. This little one is no exception. One might even say it’s barely even a recipe because it involves so little ‘production time’ – it’s rare that the ‘eating’ stage takes multiple times longer than the ‘preparation’ stage! Breakfast, I would argue, is the most important meal of the day; start it right an you underpin the everything else you’re yet to achieve… this little recipe helps you stave off Brekkie Fatigue (whereby you have the same eggs on toast every day!). MY HEALTHY EGG MUFFINS !!!
I haven’t posted a recipe for a while, so here’s another super healthy, quick and easy one to add to your repertoire! These little Egg Muffins contain some great lean protein, healthy fats, plenty of fibre and a host of vitamins & minerals. One observation I’ve made during my pursuit of a healthy lifestyle is that often, we overlook the concept of ‘presentation’. Whilst you may be ‘food-prepping’ six tupperware containers every evening, I think occasionally its important to sit down and really enjoy a proper meal, because after all we eat with our eyes (as well as with our mouths!). But the presentation bit need not amount to hours of painstaking fussing; instead I’d argue this little recipe is a perfect example that mouth-watering presentation can be pretty quick, clocking in at under 15 minutes total! These muffins can be stored in the fridge for circa 2-3 days as well, so whip up a batch and see what you think! Get the recipe and how-to here…
BREAKFAST OF CHAMPIONS ??? SALMON + POACHED EGGS ON TOAST…
I’ve received quite a few emails asking about my breakfast ideas recently. One of my all-time favourite ways to start the day is with my “home made uber-muesli’ recipe. But when that’s not available, here’s another timeless classic that takes a mere 5-10 minutes to whip up (probably the right amount of time to spend preparing your meal in the morning anyway) – the ‘Poached eggs & Salmon on toast‘. It works as ‘wake-up fuel’ for so many reasons; Salmon is high in protein with 22 grams per 100 (good for muscle repair and growth), and is also rich in omega-3 fatty acids – ‘good’ fats which help reduce inflammation, improve cell function, and have been shown to promote an improved brain function. It’s low in cholesterol and sodium, and has 0 grams of carbohydrates, fibre and sugar. The eggs are also high in protein (13g protein per 100g), very low in carbohydrates (1g per 100g). Add in some wholewheat or gluten free toast and you’re done! I personally use Burgen Soya & Linseed bread on occasion – it’s hearty, low-GI, nutrient-rich and sustains me until my mid-morning snack 🙂 See MORE for how-to and ingredients… Faya x (more…)
