Almost everyone loves Sweet Potato; it naturally sits one level higher than potato on the deliciousness continuum, precisely because of the inclusion of the word ‘sweet’. These tuberous wonders profess lower-GI properties, rendering them ‘complex carbs’, whos sugars break down over a longer period of time. These properties, in turn, are less likely to leave you a hyperactive sugar-high child for an hour, followed by transformation into crushed zombie at your sugar trough for the ensuing 4 hours. With that in mind, I thought I’d throw out the recipe for something quite delectable; these gluten free sweet potato chocolate brownies are provocatively moist, soft and gooey thanks to the inclusion of this masterful, hero ingredient, which keeps them molten and exquisite. Whilst you probably had us Swedes pegged for masters of meatballs, herring, and surstromming, we’re actually a nation of distinguished bakers and have considerable deft with a dessert too! Want proof? These delicious little Coconut Mountains are a totally classic dessert straight out of the Swedish motherland! They’re particularly appropriate this time of year, as I’ve always thought they looked more than passingly like little Easter bunnies – perfect for next week’s festivities. I’ve changed up the recipe by replacing the dairy product with coconut oil instead, as I’ve received a surprising number of emails requesting dairy-free desserts. Last weekend I experienced tidal waves of cravings for some delicious crepes! A totally inexplicable impulse, but I had to do something about it! What would the world be without dessert ?! Arguably, nothing! It would be like Juliet without her balcony, and even without her Romeo. If, like me, you have a bit [i.e. a lot] of a soft spot for chocolate, this one’s for you! But it’s a little different to normal; this chocolate brownie employs the delicious and textural wizardry of sweet potato, the low-GI, complex carbohydrate foodstuff which seems to pop up all over Instagram as chips and/or crisps. If you’re thinking ‘Hmm, Faya that sounds kinda bizarre and most probably not very tasty‘, I promise that you’d never guess it used sweet po as its main ingredient! AVOCADO CHOCOLATE MOUSSE!
THE BREAKFAST POT !!!
Easter has been and gone, and whilst I stayed on the straight and narrow, it was a tough old time! This recipe is inspired by my love of sweet things, and helped me keep control in the mornings, which kept me on track for the rest of the day. It’s naturally sweet (from berries, fruit and a sprinkling of cinnamon), has a low GI, healthy fats, plenty of protein, is filling, and is super-delicious. It takes hardly any time at all to make – 5 minutes tops, depending on how fastidious you want to be with your presentation! It serves as a great breakfast pot, dessert or indeed cheeky snack.
